The department of Food Technology is an off-shoot of the then Department of Food Science and Catering Studies which was established in September 1981 and presently runs a number of programmes.
As one of the first generation Polytechnics offering Food Technology, the department envisaged that specialized post-graduate programmes will be run in the future in the following areas:
1. Food quality control
2. Food processing and preservation
3. Community Nutrition
ACHIEVEMENTS
Since its establishment, the department has produced about 3,100 National Diplomas, 1,500 Higher National Diplomas and over 100 Intermediate Certificate holders.
The department succesfully hosted the annual conference of Nigerian Institute of Food Science and Technology in 1990 and 1995. A book titled "Practical Manual on Food Technology, Nutrition and Dietetics for schools and Industries" was published by members of staff of the department in the year 2000. Similarly a student from the department (Stephen Fagbemi, HNDII Food Technology) won the Nigerian Institute of Food, Science and Technology 2002 essay competition. The department has an array of talented staff that can render consultancy services in the areas of establishment of food industries, training and workshops, analysis of food production to meet Nigeria's National Agency for Food and Drugs Administration and Control (NAFDAC) requirements, etc.
Four members of staff served as consultants/resources persons at the Train the Trainer Workshop in Food Technology organised by the National Board for Technical Education (NBTE) at the Federal Polytechnic, Bauchi in 1998.

Two students from the department served the National Association of Food Science and Technology Students (NAFSTS) as National Presidents in 1990 and 2002. while the department collaborated with the Master Bakery Association, Kaduna State Chapter on "Bromate Free Bread".
PARTNERSHIP
The National Board for Technical Education (NBTE) in collaboration with the British Council organised a 4-day Polytechnic Food Technology Workshop in the department in 1991.
The British Council sponsored three (3) members of staff on short courses on instrumentation and Biotechnology at Bristol Polytechnic, Wales, UK. Partnership has also been entered into with the Kaduna State committee on Food and Nutrition (2002 to date).
BREAKTHROUGH
a. Production and standardization of instant Fura da nono.
b. Design and fabrication of food processing facilities e.g. fish smoking kiln, tray drier, solar drier, village bakery wares (mixer, proffer and oven) moisture tester, tumbler mixer.
c. Formulation and production of instant weaning foods.
d. Production and standardization of beverages drinks: Kunun-zaki and sorrel drink (Zobo)
e. Formulation of novel therapeutic diets from local food sources.
f. Canning of traditional Nigerian soups
The department operates a nutrition clinic at the Shehu Mohammed Kangiwa Medical Centre, Kaduna Polytechnic. A training workshop conducted for the Association of Small Scale Industrialists of Nigeria, Kaduna State Chapter, was organised in the department in 1987.
Also, the department offers training in bakery technology to members of the local community and organisations.
